Birthday Sprinkle Cupcakes

Celebrate with sprinkle cupcakes! Easy and delicious made with my Muffin Mix. Have some fun by topping them with a buttercream frosting and of course, more sprinkles!

Ingredients

  • 1 Cup milk
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. vanilla extract
  • 3 Large eggs
  • 1 Cup salted butter, at room temperature
  • ¾ Cup granulated sugar
  • 1 Pkg. Kathie’s Bakery Scratch Muffin Mix
  • 2 Tbsp. colored sprinkles

Instructions

Preheat the oven to 350°F. Line a 12-cavity muffin pan with paper baking cups.

In a medium mixing bowl, combine milk, vegetable oil, vanilla extract, and eggs. Whisk until well blended.

In a stand mixer or with a hand mixer, cream butter and sugar together until smooth.

Add Kathie’s Bakery Scratch Muffin Mix and sprinkles and mix until crumbly.  Add wet ingredients and mix until nice and creamy; do not overmix.

Fill muffin cavities three-quarters full. Bake for 18-20 minutes or until a toothpick inserted in the center of the cake comes out clean.

Cool then ice with white buttercream icing and put sprinkles on top for fun!
