A Blueberry-Lemon Loaf goes great with coffee and company!
- 1 pkg Kathie’s Bakery Scratch Muffin Mix
- 2 large eggs
- 1/2 cup oil (OR melted butter)
- 1/2 cup milk
- 1 to 2 cups fresh or frozen blueberries
- Zest from 1 lemon
Make Kathie’s Muffin Mix as instructed.
While mixing, add in blueberries and lemon zest.
Put the mixture into greased loaf pan.
Bake for approximately 50 minutes at 400°F or until the center is done (to check, insert a toothpick into the loaf and it should come out clean).
Let cool for 10 minutes and remove the loaf from the pan.
